Overview: This Level 2 course is for anyone who works where food is cooked, prepared or handled. This course is a mandatory requirement for all food handlers on board, this includes service staff and is not just limited to galley staff. The course covers the following: introduction to food safety; the law; food and safety hazards; temperature controls; refrigeration, chilling and cold holding of foods; cooking, hot holding and reheating foods; food handlers; principles of safe food storage; cleaning; and, food premises and equipment. By law, all food handlers must have an understanding of the basic principles of food hygiene and know how to work safely so as to protect the food they serve from contamination. Prerequisites: There are no prerequisites for this course. Duration: This is a 1 day course that can be taken in person or online.
